Shakshuka

This is my anti-inflammatory Shakshuka. I am by no means a professional chef however I enjoy recipes that are easy to make, delicious to eat, don't cause flare ups, and fill me up! I tried Shakshuka for the first time in Seattle earlier this year and became obsessed! It is delicious on its own or served with your favorite bread.
Ingredients:
- 1/2 onion
- 1/2 green bell pepper
- 1/2 yellow bell pepper
- 1 can crushed or diced tomatoes
- 2 eggs
- feta cheese
- cilantro and/or parsley ( i use a medley)
Recipe:
Dice all the veggies. set aside
Sauté the onion in olive oil until translucent
Add in the bell peppers & season with salt, pepper, and cumin.
Once all the veggies are soft add in your can of tomatoes, give the flavors time to mix
Create two separate pockets where you will crack your eggs into. Once you've added the eggs cover for 5-7 minutes and cook until desired. Top off with some chopped parsley/cilantro and some crumbled feta cheese and dig in!
* This recipe makes a large portion and can easily be shared or split into two meals. This is only one point on WW excluding bread.
